Is there a recommended ph tester for foods that you would use in a water bath process?
Is it safe to use a meat broth in a recipe that has other high acid foods in it?
Can you ever water bath can a sauce recipe that would use a cured meat like pancetta?

Food should only be processed in a water bath canner if there are instructions for doing so in the recipe you are using. According to the National Center for Home Food Preservation "Most mixtures of low-acid and acid foods have pH values above 4.6 unless their recipes include enough lemon juice, citric acid, or vinegar to make them acid foods."
