Asked January 21, 2025, 1:49 PM EST

Can you safely consume potatoes that have sprouted (about 6 inches long) if I cut the sprouts out, and peel them. They are also shriveled some, if edible, they could bee peeled. Thank You

Great question! Potatoes are a versatile food that can be turned into so many things that taste great.  if the sprouts are small and then the potato still firm,  you can cut off the sprouts and use the potato.

However, once the potatoes become winkled and soft and the sprouts become significant, it is advisable to discard the potato. You can find more information at this article from MSU Extension on Potato Safety. https://www.canr.msu.edu/news/food-safety-of-potatoes
