Can Splenda be used as a substitute for sugar in jellies?

Hi Jennifer, The key ingredient in Splenda is sucralose, which is safe to use in jams and jellies to create a low sugar product. One important thing to note is that you should not use full sugar recipes or traditional pectin and simply swap sucralose for the sugar. You will end up with a runny product, and if you are using any low-acid ingredients it could also be unsafe. Make sure instead that you are using recipes that are designed for reduced sugar.
