Expert Response
When you say softened, do you mean rehydrated with liquid or just left out exposed to air? It also depends on what was freeze dried. If it is meats or prepared meals, then you have up to 2 hours after the item has been rehydrated and heated. If it is something else like fruits or vegetables, you would want to store them in the fridge and they will last about a week.
If you are talking just opening the bag, most freeze dried foods will last one to three weeks but foods containing dairy, shellfish, brown rice and tree nuts should be consumed within a week or two after opening.
To check if freeze-dried food has spoiled, look for signs such as discoloration, mold, texture changes, a sour or rancid odor, or a spongy feel.
