I have two Amaryillis that I would like to get to rebloom. They have many long and healthy leaves, but no blooms. Do I need to cut the leaves off now?

No, the leaves are needed to feed the bulb with energy made from photosynthesis. If it isn't already, put the plant in a location in front of a sunny window, or if you don't have good window light, under a grow light so it can photosynthesize enough to store energy. Dormancy is needed to get the plant to rebloom from year to year, which is ideally initiated in late summer or early fall (especially if it spent the summer outside), so might be difficult to do this late in the year.
