I a, thinking of planting a grove of serviceberry trees but find only a description of “serviceberry bushes” on this site. Could I get information on the tree form as well as a comparison tree vs. shrub? And perhaps more information, for example: water use, best placement, etc.

They are kind of a "tree/shrub". They are sometimes sold as multi-stem (more shrub) and sometimes sold as a single-stem tree. And their heights vary - in general, anything less than 12-15 feet tall can be considered a shrub, especially when it has multiple trunks. 

There is a native serviceberry, the Utah serviceberry, is a little shorter, only about 8-10 feet. Tree forms include shadblow (25' tall x 20' wide) and 'Autumn Brilliance' (20' tall x 15' wide). There might be a couple others available in the trade, but in general, all are shorter than 20-25 feet.
