Expert Response

Hi Imogen,

I do not know a lot about medieval techniques for food preservation specifically, but if you want to learn more about how we keep preserved food safe and tasty today, I'd be happy to chat. Some of the techniques we teach (drying, pickling, root cellaring) were used in previous eras of history, but food scientists have helped us improve the techniques to make them safer. If you want to find time to talk on the phone or via Zoom, please let me know.
