Safe substitute for salt pork in canning recipes? #887575

Several pressure canning recipes from the new Ball Canning book 38th edition call for salt pork (cut into 1/2 inch pieces) but I can't find salt pork locally. What are safe substitute options? For example would ham or thick-cut bacon work? Both could be cut into 1/2 inch pieces. I also have access to nitrate free bacon if that would be preferred. Example is the Boston Baked Beans recipe on p 138.

Hi Esther,

I would advice contacting the company since they would know what might be a safe alternative. You might be able to find a butcher close by that could help identify a local salt pork.
