I am curious what it would take to have. A couple apple varieties identified.

Hello Mary, 

Apples are quite difficult to specifically identify. There are so many different types of apples and they are not true to seed - if you plant a seed from a Gala, you will not grow a Gala. 

In order to specifically ID apple varieties, you would need to submit them for genetic testing. This is a service currently offered by UC Davis: Foundation Plant Services (ucdavis.edu).
