Are farm fresh eggs safe unrefrigerated? #881784

Asked August 16, 2024, 1:13 PM EDT

I was curious if farm fresh eggs are safe unrefrigerated. Some people that sell them keep them on the counter for up to 3 weeks and insist that they are safe since they are unwashed and have a coating.

I'm hesitant about eating them that way. And was wondering if they truly are safe.

Thank you

Georgette,

Farm fresh eggs are safe unrefrigerated, for up to 3 weeks after harvest if they are unwashed.  Unwashed eggs have a thin, filmy, protective outer layer called the cuticle. This cuticle is the helps keep bacteria out of an egg while letting oxygen circulate.  Once the egg has been washed it, it should be refrigerated at 40°F or lower. The eggs will last longer if they are refrigerated, up to 45 days.  Before using or eating, wash with warm water to remove any dirt. When purchasing farm fresh eggs, ask to make sure they have not been washed if they are unrefrigerated and when they were harvested.  Please let me know if you have any other questions.
