Hello,
Can you offer any suggestions for soil amendments to add to the planting hole before transplanting your vegetables? For instance, do you recommend adding coffee grounds or eggshells to the hole before planting a tomato plant?

You can add coffee grounds to a compost pile but we would not suggest adding them to a planting hole directly. Eggshells will not provide much in the way of calcium or other plant-available nutrients unless they are crushed into a fine powder and allowed to compost. Instead, the only amendment that might be needed, if any, would be finished compost. A laboratory soil test of a veggie bed can reveal its organic matter content (which compost will improve over time), acidity (pH), and basic nutrient levels.
