Hi Pat,

Although I've never tried eating a Hosta they are indeed eatable.  I've attached an article from the University of Vermont with more info on when to harvest and ideas on how to prepare Hosta.  Please keep in mind that Hostas are toxic to dogs and cats.  Do not use toxic pesticides or chemicals on any crop you plan to consume.
