Canning Recipe #865597

Asked April 23, 2024, 1:29 PM EDT

I was given a large amount of lemons and am trying to find a tested lemonade concentrate (or lemonade or lemon syrup) recipe to use to water bath can them. I have already done some using the Ball Strawberry lemonade concentrate, as well as salt preserving others but still have a lot left over. I am finding some lemonade recipes calling for a 1:1 ratio (1 cup fresh squeezed lemon juice, 1 cup sugar + 6 cups water) heated to 190 degrees and water bath canned for 15 minutes for pints. Does that sound right or do you know of any resources or tested recipes?

Expert Response

Hi Deanna,

There are a variety of concentrations I have seen for lemonade. Below are a few of them. You may want to try out a few different ones. The 1:1 ratio plus 6 c water you mentioned above is for lemonade. Most I have seen are 1:1 for lemon juice and sugar and then don't add water. Or some do add water to the concentration. I'm sorry I don't have any tried and true response but would love to hear back about your experience. Feel free to email me at <personal data hidden>.

Thanks!

Great!
A few of these blogs I had saved so I feel more comfortable seeing that you picked them too. I will try a few and give feedback for sure!

Also, cheers to a fellow dietitian - hoping someday I can get a job like yours!

Take care,
Deanna
