Thanks for your question. While Ball does now advise that consumers canning apples with Ball recipes acidify the product according to their updated guidelines, the National Center for Home Food Preservation (NCHFP) and Oregon State have not changed their recipes or recommendations. The full statement from the NCHFP gives an explanation as to why (attached).
As always, it is important to follow proper canning guidelines to ensure a safe product, which includes using fresh apples. Apples kept in storage for long periods of time generally decrease in acidity, as noted in the NCHFP statement.
