Turning jelly jars upside down #864900

Asked April 17, 2024, 3:49 PM EDT

MSU Extension states that a jelly or jam jar can be turned upside down after processing, and it's sealed in order to distribute fruits throughout the jar. Ball and other sites are saying no.

What's the actual safe process for this please?

Hi Sandra,
Typically the recommendation is to leave jars undisturbed for 12-24 hours after removing them from the canner. In the article you found from MSU Extension, there are five steps to follow to prevent separation prior to turning them upside down, gently. Also note that a separated product is safe to eat, although it may not be aesthetically pleasing, so it is fine to allow the separation and then stir after opening. So one could follow the steps outlined in the article if desired, but it is by no means necessary.

Thank you. I'm sorry, but I'm still not clear. The article posted states "after sealed", which can happen just moments from being removed from the canner.  Waiting the normal 12-24 hours would mean the jelly is set and it's too late to distribute the fruits.

So I infer from the article that if my lid sealed, even if 12 hours hasn't passed, it's considered safe to gently flip them to distribute the product?

Correct.
