Thank you for reaching out and welcome to tree fruit production! Those are certainly some established trees. That will save you some of the time and considerations that go into starting up fruit trees!
I am happy to direct you to some extension resources to get you started. The main considerations in tree fruit are horticulture and pest management. I'll share resources for both.
