I am interested in learning how I can find the yield for growing flowers for cutting per acre. Specific flowers include Sunflowers, Dahlia and Tulips.

Here are a couple of links that will provide an idea on yield of sunflowers and dahlia. Tulips typically produce 1 stem per bulb so yield will depend on the planting density. I've also included other links that may be helpful.
