Interior of Butternut Squash #853547

Asked October 19, 2023, 8:31 PM EDT

I did not grow this squash, but got it recently from Second Harvest Heartland (I believe). I have a question about its interior. The area just around the seeds was a light green, and maybe a mushy texture, but maybe no more mushy than the stringy area next to the seeds usually is. The squash looked ripe , nice orange color inside, beige outside. No odor. I scooped out the seeds and nearby greenish pulp, and baked it. Looks normal. Have you ever seen the area around the seeds looking light green? Sorry, I didn’t think to take a picture. Thanks!

Expert Response

It’s difficult to say without seeing the squash. As long as the flesh was firm when you scraped out the seeds it would be fine.

It could be the time it was harvested or it could be the excessive heat we have had this summer. The heat has made some vegetables ripen differently.
