Hi Laura,
This is probably caused by inconsistent watering. The tuber cells grew, then stopped, then grew, then stopped, then grew. Sweet potatoes don't want to be wet while growing, but you will get more consistent tuber shapes--like those in the grocery store--if you maintain a consistent moisture level.
That said, there's nothing wrong with funny-shaped sweet potatoes! They still taste delicious.
