Canning Asian Pear Sauce #813354

Hello, Can you tell me how to can asian pear sauce safely? I have discovered that slices or halves require adding lemon juice to the jars, but there seems to be no information about canning asian pear SAUCE. Thanks!

Great question! 

You're correct about Asian pears needing acidification before canning, due to their lower pH. If an Extension, Ball, or NCHFP recipe isn't available, you can preserve the pears according to SP50-694 Preserving Asian Pears (available in the link below) and later make sauce from the canned pears to eat as you need them. Another option is to make the sauce and freeze it.

Thanks for the quick response!  I hope the university will someday test asian pear sauce canning.  It tastes amazing!  Your suggestions are very good though.  I will probably freeze some in my limited space and can the others as you suggested.
