Hello,
Do you have any approved canning recipes for jam and jelly recipes such as blackberry habanero? I am looking for recipes to make pepper jams and jellies to use with cream cheese appetizers.
Thank you.

We have a tested recipe for making pepper jelly which can be found in SP50-454 Preserving Peppers. It can be found on our OSU Food Preservation website: Http://extension.oregonstate.edu/fch/food-preservation.
That said if you want to add a small amount of chopped hot peppers in place of some of the crushed berries to a high acid fruit such as blackberry jam using a full sugar jam recipe. I wouldn't use the reduced sugar recipes and preferably one with added lemon juice. You can experiment with up to 1/2 cup of chopped peppers replacing some of the crushed fruit.
If you have other questions you might like to call the OSU Food Preservation Hotline that is now open M-F from 9 am-4 pm and staffed by certified Master Food Preservers. The number is <personal data hidden>.
Good luck and thanks for using Ask Extension.
