Found a couple of these growing up around knockout roses. Never seen this and have no idea what these are. Very tall, large leaves, deep roots, etc.

This weed is a Pokeberry. The flowers will produce purple berries and yes, it does have a very large and deep taproot.
This can be a real problem in the garden and you do not want it to spread. Obviously, they are harder to remove when they get some size because of the taproot.
Glyphosate (Roundup), Dicamba, and 2,4-D can all be herbicides to kill Pokeberry. Always read and follow the label instructions when using pesticides.
You also need to be aware that this plant is poisonous-so, be careful handling.
Good luck with this weed-there are attractive things about it but it is not welcomed in the garden!
