My Dahlias were thriving two weeks ago and now are looking sickly. They are now wilty and not absorbing water as well.

Your containers look crowded, and dahlias need a lot of moisture. Low moisture and hot days could have caused the wilting. Begin watering heavily to see if they revive. If they do not, the cause might be verticillium wilt. Look also for pests. The attached article contains a question similar to yours, and the expert's answer.
