Food Product Safety Testing #778254

Hi, I am seeking information about food safety and testing for my start-up company. I am in the Denver area hoping to bottle and sell verjus (high acid, non-alcoholic juice) made from Colorado wine grapes I come from the restaurant and beverage industry, so production and packaging are new for me. I'm hoping to learn more about proper product testing and safety. Specifically, I am interested in shelf-stability as my product would of a low pH (3.5 or below). Would love to know if there are any sort of tests I can run at home in addition to submitting my product for lab testing. I appreciate any help you can provide! Thanks, Kevin Murphy

Hi Kevin, CSU Extension offers a food safety training for Colorado Cottage Food Producers.  Your product (beverage) does not fall under Colorado Cottage Food Act.  The best place to start your journey is with the Colorado Department of Public Health and Environments (CDPHE), Manufactured Foods Division.  They can direct you to the regulations and testing services you will need to get started.

Information on purchasing, using and calibrating a digital pH meter can be found at University of Wisconsin Extension website.  CDPHE might also have some recommendations on pH meter choices.
