Bacon Bourbon Jam #778214

If it turns out to taste as wonderful as I have read in various comments, I would like to give jars of Bacon Bourbon Jam that I read about on the Serious Eats site (https://www.seriouseats.com/bacon-bourbon-jam-recipe). The ingredients are 1 1/2 pounds bacon 2 medium onions 3 medium cloves garlic 1/2 cup cider vinegar 1/2 cup packed dark brown sugar 1/4 cup maple syrup 6 tablespoons brewed coffee 6 tablespoons bourbon Another recipe is identical except it eliminates the dark brown sugar. I am familiar with fruit jams, but this is quite different both in ingredients and method. Please let me know what preservation methods I should use so that the jars can withstand days or weeks at room temperature before opening. Thank you.

Sounds interesting!  But, unfortunately this recipe can not be preserved in a way to make it shelf stable (room temp. for more than 2 hours).  I must be stored in the refrigerator (40 F degrees or below) for up to a month, or frozen for up to 6 months.

Both the meat and fat content of the bacon, as well unknown pH of the final product make it high risk for botulism, which if inhaled or consumed can be deadly.
