Hello,
I have seen where someone has pre-cooked the chicken in pressure cooker, then shredded. After shredding the chicken, they then pressure canned for 90 minutes. My question is: Doesn't this process over cook the chicken? Is it safe to pressure can raw chicken and meats?

Chicken can be canned either raw or partially cooked. Partial cooking gives it a little better texture if you are going to use it in chunks. For shredded chicken, pressure canning means it is well done and shreds very easily when you open the jars so there is no need to pre-cook and shred it before canning. That is an extra step and the chicken would be extremely well cooked.
