My wife and I were visiting the Great Sand Dunes this weekend, and saw these crops being grown on several farms. Can someone identify them for us? We're simply curious what they're growing. Thanks!

The San Luis valley is known for growing potatoes and other crops like alfalfa, hay, carrots etc.
This looks like a potato field to me. I am not able to zoom to identify the leaf of the plant. But this is how you would grow potatoes by covering up the seed potatoes and hill them once they are growing and the crop is at risk to be exposed to sunlight. The hill will keep the potato covered to prevent it from getting green.
