should I pick my persimmons, even though they're not fully ripe? #731679

My hachiya persimmon has borne fruit for the first time this year, and the about 15 persimmons are only halfway red. With the frost coming this weekend, should I pick them and let them ripen indoors, or will they be ok left on the tree? Thank you!

The persimmons will be fine while on the tree during a light frost. In fact, the low temperatures will help trigger ripening.

Pick when fully orange -- actually, cut them off -- then eat, process the pulp, or freeze the fruit intact. If the latter, you can wrap individual fruit to freeze them, then remove them one by one as needed and eat while still slightly frosty.
