Pork Stock #679435

I have pork stock I want to can. I can find directions for beef, chicken etc. But only for canning pork, not just the stock. Would you can it the same as beef or chicken? 25 min for quarts at 10lb pressure?

Hi Alice,

 As you mentioned there is no tested recipe specifically for pork broth. But canned pork has a tested recipe so you can follow the directions from National for making soup - https://nchfp.uga.edu/how/can_04/soups.html…. Essentially you will be canning the strained broth. Be sure to skim the fat as that can interfere with jar seals. Canned pork broth may have a particularly strong flavor, which may be the reason there is no tested recipe for it, the quality might not be that high.
