What is the timing for pressure canning pickled beets? I have seen 30-35 minutes under 11 lbs of pressure, but also see a recipe for processing with water bath for 10 minutes. This seems like an important discrepancy. Also does the timing requirements differ between plain beets vs pickled beets?

I don't know what you are looking at but glad you questioned the timing. If you pickle the beets and use a researched based recipe the processing time is 30 minutes for pints and 35 minutes for quarts in a boiling water bath. The reason is that you have lots of vinegar and it changes the acidity level of the beets. If you are just canning beets by themselves the processing time is 30 minutes for pints and 35 for quarts but must be done in a pressure canner at 10# pressure for weighted gauge or 11# for dial gauge canner.
