Fresh Collard Greens #619982

What is this on my collard greens? Will it make me sick? I bought a couple of bunches from the super market 2 days ago. I have never seen this before. Should I throw them out?

Hello - This blueish color or "bloom" is the epicuticular wax of the plant. Basically, it is a natural waxy coating that the plant produces as a form of protection (it decreases water loss, reflects UV light, etc.). It is normal on collard greens and kale and it is not harmful to eat. As with all fresh produce though, you should always wash greens well before eating them. You do not need to scrub off all of this waxy bloom. Just give it a good normal wash as you would do for salad greens.
