My pickles look and smell as a million bucks but they have black spots on them as they pickle (the goosebumps are black). I did however keep them in the refrigerator for about 4 days before I process them.... are the still good or do I have to toss them?

Expert Response
Dark spots on pickles are indeed related to holding too long before pickling and processing. The standard recommendation is "vine to brine" within 24 hours. Provided you used a safe recipe for preparing your pickles they are safe to eat, but probably won't be top quality. For safety, check for a 1:1 ratio of vinegar to water (or more vinegar than water). Also, vinegar needs to be 5% acid or greater. if you need additional information please feel free to call me at<personal data hidden> or email directly at <personal data hidden>
