If I understand your query correctly, you are looking for milk processing short courses?  Oregon State University offers such courses intermittently, although there may not be much in that area this year: https://foodsci.oregonstate.edu/foodsci/fst-extension-schedule. Cornell University offers more regular courses, detailed here: https://dairyextension.foodscience.cornell.edu/programs/certificate-program/. So do the University of Wisconsin-Madison: https://www.cdr.wisc.edu/shortcourses and Penn State: https://foodscience.psu.edu/workshops. There may be some online options through these other programs.
