I just planted this plant in the spring, and about a month ago it shed completely. Only one stem was left. I can see the new leaves starting to come in again, but would like to know if I did something wrong.

Your astilbe was eaten. From the look of the remaining stems, I would guess it is rabbit damage. You may want to think about using a repellant or fencing your plants off.
