I'm looking for ornamental grass to cover a large area on my property. I would like it to be upright and not droopy, like some that I see. I like the grass in the photo I've attached if someone could identify it?

Choosing an ornamental grass depends on the site. Shady, sunny? I cannot identify the grass in the picture. My suggestion is to go to a nursery and ask their opinion depending on the location you plan on planting your grass. Heavy rains, animals running through, etc. all can cause grasses to fall over.
