how to use bulk pectin #450872

I have been making all my own jams and jellies for over 40 years and have always used boxed premeasured pectin and followed the included recipes. In trying to save a little money because of the increasing price i decided to try bulk pectin. I have had pretty good success with it but am confused by their blanket recipe of 3 3/4 c fruit, 5 1/4 c sugar and 3 T pectin. I spent a good bit of time trying to find a good way to convert the pectin. I know a box contains 1.75oz but when I measure out a box of pectin it is more than 3 T and 1.75oz is about 4-5T. Is there a standard measure for bulk pectin?

Pectin manufacturers know their products well.  Each brand of pectin may vary slightly in quantity used per batch, depending on the ingredients and fillers, but should have the same gelling strength.  We always suggest that consumers follow the instructions with the specific pectin they purchase. I see that on the packages we have here, they also say 3 T is the equivalent of one box. In our classes we switch back and forth between individual boxes and 3 T.  bulk pectin and have had success with both products. 

All pectin manufacturers have customer service numbers or emails which should be on the label.  Don’t hesitate to contact the company directly if you have specific questions about their product.
