Neither I nor the knowledgeable people on the Facebook page Plant Idents are able to give you a firm identification for your aloe plant. I have included a link below to more information about aloe plants. You won't be able to change the branching habit of your plant because it is genetically determined. You could look for an aloe plant with a form you like using the photos in the link below.
