Re-canning store purchased tomatoes #225247

Asked January 22, 2015, 10:11 AM EST

A question recently was posed to me whether  it was safe to use store purchased canned tomatoes in a recipe to make home canned salsa. This came up because someone wanted to do this in an area where tomatoes were not easily available. The only thing I could find on line was for making spaghetti sauce with canned tomatoes and the gardening site suggested it was ok with tested recipes. I am not sure if this person had a "tested" recipe for salsa or not. Can I get a definitive answer and a tested recipe if necessary? Thank you

Expert Response

Provided they are plain canned tomatoes (nothing added such as sugar that can impact acidity), you can substitute for fresh tomatoes on a volume per volume basis.

Be sure to follow approved recipes, especially with regard to vinegar/lemon juice addition.
