I am helping a friend replace an arbor that has been crushed by a Jasmine vine. I'm not entirely sure what variety it is, but she says it blossoms in mid-Summer. From what I've read, it is best to prune after blossom.
I will need to cut out the old arbor, as it is completely entangled. I am wondering how much this will hurt the plant?

Pruning Jasmine in January is not going to harm the plant per say, it will just remove the flowering buds. Cutting the flowering buds off will make the Jasmine not bloom until it has a chance to grow new flower buds. Jasmine normally tolerates heavy pruning by that I mean up to a third of it cut away. The Jasmine is your picture is quite over grown so prune away.
