I canned (water bath) some pepper jelly last fall and now there are white spots throughout all the jelly. Some jars have more spots than others but the worst ones do not look appetizing. Could this just be the sugar crystalizing and does that mean its unsafe to eat?
The picture has two jars and the one on the right is the worst. The difference in color is due partly to my forgetting to add food coloring to that batch.

Thanks for your question. My first question is - what method and recipe did you use to can your jelly? I need a little more info to be able to help you. If replying through this system is not convenient, it is possible to bring your jelly into your local Salt Lake County Extension office or call and visit with someone that could troubleshoot with you about what could be the issue.
