Our two cherry trees have been very healthy, but this July we started to notice the leaves browning, and within a month the relatively healthy looking trees look nearly dead. They also have spots of gooey looking sap on the trunk and branches. Is this some type of boring insect, and can the trees be saved or are they too far gone?

It sounds like your cherry tree does have a boring insect in the trunk. I cannot tell you if the trees will survive. You can try to poke a flexible wire into any holes in the tree with the intent of reaching the larva and killing it. There is a good fact sheet at the link below.
