Explanation of bathing garlic #159998

Asked November 09, 2013, 5:46 PM EST

I have been told that I need to bathe my garlic before I start the pickling and canning process. Can you tell me what is meant by "bathe"? Would you have a recipe for pickling and canning garlic?

Expert Response

I think you might mean blanching garlic. Blanching is partial cooking to destroy the enzymes and soften the tissues of a vegetable so it will absorb the pickle brine. The Ball Blue Book has a recipe for pickling garlic. Their instructions include the blanching step.

Pickled Garlic
Yield: about 6 half-pints

INGREDIENTS
6 cups peeled cloves garlic
3 cups of white vinegar (5%)
1 cup sugar
1 teaspoon canning salt

INSTRUCTIONS
Blanch garlic in boiling water for 1 minute. Drain. Combine sugar, salt and vinegar in a large saucepot. Bring to a boil. Pack hot garlic into hot jars, leaving ½ -inch headspace. Ladle hot liquid over garlic, leaving ½ -inch headspace. Remove air bubbles. Adjust two-piece caps. Process 10 minutes in a boiling water canner. Process 15 minutes at elevations from 1001-3000 feet, 20 minutes at 3001-6000 feet elevation. Source: Ball Blue Book, TMs Ball Corporation, Hearthmark LLC d/b/a Jarden Home Brands, 2010.
