I have white spots on my herbs: marigolds, thyme, oregano, parsley, and rosemary. What are these spots, and is it O.K. to eat them? Is it O.K. to dry them and use them later?

The white spots and loss of chlorophyll on your herbs and flowers were a common occurrence this season. They are caused by sucking insects. Possible culprits include spidermites, whiteflies, thrips, and leaf hoppers. They have straw/needle-like mouthparts which they insert in the leaves and withdraw liquids. The herbs are fine to eat or dry in that they are harmless, but their potency could be affected, so they may not taste as strong as they would otherwise. Usually the plants push out enough new growth which is unaffected that you have plenty to use.
Often the damage becomes most apparent as the weather becomes hot and dry, which our late summer did this year.
