What type of tree's are these, what could be eating the leaves and what are the black spots on the fruit caused by. I know one is a Prariefire Flowering Crab but I don.t know what the other is or which is witch..

The top plant in your photo is a crabapple and at the bottom is an apple. Japanese beetles or other scarab beetles are probably eating the leaves, as the populations of these beetles is extremely high this year.
We can't say for sure what is making the spots on your apple, but it appears to be insect damage and the most common culprit is the codling moth. If you are interested in growing these apples for eating, you'll need to follow a spray schedule beginning in the spring as well as other procedures.
